Trolley Room
This is the room where the curd is poured into the moulds to give the cheese its shape.
This room is normally conditioned with gravity-circulation or low-ventilation systems and humidity control.
 
The gravity-circulation system consists in a set of gravity-circulation evaporators installed on the ceiling or along the walls to cover the area in a uniform way.
 
The low-ventilation system includes an air treatment unit (consisting of an evaporator connected to the refrigeration system, an evaporator connected to the hot water circuit and a ventilator) and a fiber duct that distributes air uniformly around the room through a series of holes in the duct.
