This is the room where cheese is salted. Air conditioning can be provided with a gravity-circulation system or a low-ventilation system.
 
GRAVITY-CIRCULATION SYSTEM
 
The gravity-circulation system consists in a set of gravity-circulation evaporators installed on the ceiling or along the walls to cover the area in a uniform way.
The evaporators can either use a refrigerating liquid produced by a refrigeration system or gas supplied by a compressor.
