TROLLEY ROOM
This is the room where the curds are poured into the moulds to give the cheese its shape.
This room is normally conditioned with gravity-circulation or low-ventilation systems and humidity control.
The gravity-circulation system consists in a set of gravity-circulation evaporators installed on the ceiling or along the walls to cover the area in a uniform way. The evaporators can either use a refrigerating liquid produced by a refrigeration system or gas supplied by a compressor. Humidity control is achieved by heating coils connected to a hot water system and installed all around the room.
The low-ventilation system includes an air treatment unit (consisting of an evaporator connected to the refrigeration system, an evaporator connected to the hot water circuit and a ventilator) and a fiber duct that distributes air uniformly around the room through a series of holes in the duct.
This innovative system makes installation easier and at the same time creates a healthier environment.
CHEESE SALTING
This is the room where the cheese wheels are salted. Air conditioning can be provided with a gravity-circulation system or a low-ventilation system.

If unpacked cheese is stored, the room can be equipped with a gravity-circulation evaporator system to prevent excessive drying.
